Chicken and Shrimp Jambalaya

Prep/Cooking Time: Prep Time: 30 Minutes / Ready In: 1 Hour 15 Minutes

Ingredients:

1 pound fully cooked smoked sausage link, cut into 1/4-inch slices
2 cups chopped onion
2 cups sliced celery
2 cups chopped green bell pepper
1/4 cup chopped jalapeño peppers
1 tablespoon minced garlic
1 (28 ounce) can whole tomatoes
3 cups water
2 cups cooked, cubed chicken
2 cups cubed ham
1 cup uncooked long-grain white rice
1 tablespoon Chicken Flavored Bouillon Granules
1 1/2 teaspoons paprika
1/2 teaspoon dried basil leaves
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon dried thyme leaves
1/8 teaspoon cayenne pepper, or to taste
2 bay leaves
1 pound fresh or frozen raw shrimp, shelled and deveined
Hot pepper sauce

Directions:

In Dutch oven over medium heat, cook sausage, onion, celery, peppers, and garlic until tender. Add remaining ingredients except shrimp and hot pepper sauce. Bring to a boil. Cover; reduce heat and simmer 20 to 25 minutes or until rice is tender. Add shrimp. Cook 2 to 3 minutes or until shrimp turns pink. Remove bay leaves. Serve with hot pepper sauce.

Makes 12 servings.

Bacon Chicken

Prep/Cooking Time: Prep Time: 15min / Cook Time: 25min

Ingredients:

6 slices bacon
1 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts
1 onion, chopped
3 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1-1/2 cups shredded cheddar cheese

Directions:

Cook bacon in 12″ skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don’t wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. Place chicken in ungreased 12×8″ baking dish.

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted.

Serves 6.

Traditional Monday Red Beans And Rice

Ingredients:

1 lb red beans, soaked in about 2 quarts water overnight
3 ribs celery, chopped
1 medium green bell pepper, chopped
1 clove garlic, minced
1 large onion, chopped
2 Tblsp parsley flakes
1/4 tsp cayenne pepper
1 package smoked sausage, cut in 1/4-inch thick slices

Directions:

Rinse and drain soaked beans; place in a 5 to 6-quart pot and add 6 cups of water. Bring to a boil, then reduce heat and simmer for about 1 1/2 hours, or until beans are tender.

Stir occasionally. Add remaining ingredients and salt to taste; simmer for about 1 hour, stirring occasionally. Add water as necessary.

Serve over hot rice.

Savory Skillet Lasagna

Prep/Cooking Time: prep: 5 mins / cooking: 25 mins

Ingredients:

1 lb Italian sausage links, casings removed
1 can (28 oz) Hunt’s Whole Peeled Tomatoes, broken into chunks
1 can (6 ox) Hunt’s Tomato Paste
1 Tbsp Italian seasoning
3 cups pasta
2 cups shredded mozzarella, divided

Directions:

Cook pasta according to directions on package.

Cook sausage over medium-high heat in 10-inch skillet until crumbled and no longer pink. Drain. Blend in tomatoes, paste, and seasoning. Simmer for 5 minutes. Remove from pan; keep warm.

Place half of cooked pasta in bottom of skillet. Pour half of tomato-meat mixture over pasta. Sprinkle with 1 cup mozzarella cheese. Top with remaining pasta, tomato-meat mixture, and mozzarella.

Cover and cook over medium heat for 5 minutes or until heated through and cheese melts. Remove from heat; let stand 1 minute.

Cheesy Tortellini and Bacon

Prep/Cooking Time: prep: 5 mins / total: 17 mins

Ingredients:

1 pkg. (9 oz.) DI GIORNO Three Cheese Tortellini
2/3 cup frozen peas
3/4 cup DI GIORNO Four Cheese Alfredo Sauce
1/4 cup OSCAR MAYER Real Bacon Recipe Pieces
1/8 tsp. freshly ground pepper
1 Tbsp. KRAFT Shredded Parmesan Cheese (optional)

Directions:

Add pasta and peas to 2-1/2 quarts boiling water. Cook 6 to 8 minutes or until desired tenderness, stirring frequently. Drain well.

Return pasta and peas to pan. Stir in Alfredo sauce and bacon. Cook on low heat 2 to 3 minutes or until heated through, stirring occasionally.

Sprinkle with pepper and Parmesan cheese.

Makes 3 servings, 1 cup each.

Suggestion: Substitute 1 cup small broccoli florets for the peas.

Hearty Breakfast Skillet

Recipe Source: Velveeta package

Prep/Cooking Time: Prep: 10 minutes / Cook: 12 minutes

Ingredients:

1/2 lb. (8 oz.) bulk pork sausage
6 eggs
2 cups frozen shredded hash brown potatoes
2 Tbsp. water
1 can (10 oz.) diced tomatoes and green chilies, drained (i.e. Rotel)
1/2 lb. (8 oz.) Velveeta, cut up

Directions:

Brown sausage in large nonstick skillet on medium heat; drain. Add potatoes and tomatoes; cook 5 minutes or until potatoes are browned, stirring occasionally.

Top with Velveeta.

Beat eggs and water with wire whisk; pour evenly over ingredients.

Ribs 57

Ingredients:

1 cup Heinz 57 Sauce
1/2 cup honey
4 lbs pork spareribs

Directions:

Combine 57 Sauce and honey. Grill ribs, turning and brushing with glaze during last 10 minutes of cooking time. Reheat any unused glaze until bubbly and serve as an accompaniment.
