Showstopper Chicken Surprise

Prep/Cooking Time: Bake: 12 minutes, Prep: 25 minutes

Ingredients:

4 large skinless, boneless chicken breast halves (about 1 1/3 pounds)
1 cup shredded smoked Rofumo cheese or smoked Gouda, Edam or cheddar cheese (4 ounces)
1/2 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
3/4 cup fine dry bread crumbs
1 tablespoon peanut oil or other cooking oil

Directions:

Using a sharp knife, cut a pocket in the side of each chicken breast half. Stuff each pocket with about 1/4 cup of cheese. Secure openings with wooden toothpicks, if needed.

In a shallow dish, stir together flour, salt and pepper. Place eggs in another shallow dish, and place bread crumbs in a third shallow dish. Coat stuffed chicken breasts in flour mixture. Dip floured chicken in beaten eggs, then coat well with bread crumbs.

In a large, ovenproof skillet, heat oil over medium heat. Cook chicken 2 to 3 minutes per side or till browned.

Transfer skillet to a 375 degree F oven and bake, uncovered, 12 to 15 minutes or till chicken no longer is pink.

Makes 4 servings.

Chicken Burrito Bundles

Ingredients:

2 cups chopped cooked chicken
1 (1 1/4 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
6-8 inches tortillas
1 (8 ounce) package shredded sharp cheddar cheese
3 plum tomatoes, diced
1 small onion, diced

Directions:

Heat oven to 350. Place chicken and seasoning in large heavy duty zip lock bag and shake to coat. Spread beans down center of tortillas, top with chicken, cheese, tomatoes and onion. roll up. Wrap each in foil. Bake at 350 for 15 minutes. Serve with salsa.

Makes 6 servings.

Minnesota Chicken

Ingredients:

1 cup hot cooked wild rice (1/2 cup uncooked)
1 cup ricotta cheese
1/3 cup finely shredded Parmesan cheese
1/3 cup bottled minced roasted garlic or 2 tablespoons minced garlic (about 12 cloves)
1 teaspoon snipped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon snipped fresh parsley (optional)
Salt and pepper
6 skinless, boneless chicken breast halves (about 1 1/2 pounds total)
2 tablespoons butter
1 recipe Red Pepper Sauce
Fresh chives (optional)

Directions:

For stuffing, in a medium bowl stir together the wild rice, ricotta cheese, Parmesan cheese, roasted garlic, rosemary, and, if desired, parsley. Season to taste with salt and pepper. Set aside.

Place each chicken piece between 2 pieces of plastic wrap. Pound lightly with the flat side of a meat mallet into a rectangle about 1/8 inch thick. Remove plastic wrap. Spoon about 1/3 cup of the stuffing into the center of each chicken piece. Fold in bottom and sides; roll up. Secure with wooden toothpicks.

In a large skillet cook chicken on all sides in hot butter over medium heat until brown. Transfer chicken to a 2-quart rectangular baking dish. Set aside the skillet for sauce.

Bake chicken in a 350 degrees F oven for 30 to 35 minutes or until chicken is no longer pink. Discard toothpicks.

Meanwhile, prepare the Red Pepper Sauce. To serve, cut each chicken roll into slices. If desired, garnish with fresh chives. Spoon the sauce over chicken.

Makes 6 servings.

Red Pepper Sauce:

In the reserved skillet combine 1/4 cup chicken broth and 2 tablespoons wine or chicken broth. Cook about 2 minutes or until reduced by half, stirring to loosen browned bits. Stir in 2 tablespoons chopped green onion, 1 tablespoon minced shallot or green onion, 1 1/2 teaspoons snipped fresh parsley, and 1 clove garlic, minced. Cook for 1 minute. Stir in 1 cup whipping cream. Bring to boiling; reduce heat to medium. Cook for 3 to 4 minutes or until slightly thickened, stirring occasionally. Stir in one 12-ounce jar roasted red sweet peppers, drained and cut into strips, and 4 teaspoons snipped fresh chives.

Note:

You can buy the minced roasted garlic and the roasted red sweet peppers in jars in some supermarkets or specialty shops. To roast your own sweet pepper, cut 1 medium red sweet pepper in half. Remove and discard stem, seeds, and membranes. Cut each pepper half in half again. Place pepper pieces, cut sides down, on a foil-lined baking sheet. Bake in a 425 degrees F oven for 20 to 25 minutes or until the pepper skin blisters. Remove pepper pieces from baking sheet; wrap in foil. Let stand for 30 minutes. Remove and discard skin from pepper pieces; cut into strips.

Cheesy Fried Potatoes

Prep/Cooking Time: Prep Time: 10 Minutes / Cook Time: 30 Minutes

Ingredients:

2 slices bacon
2 tablespoons butter
1 tablespoon diced onion
4 potatoes, peeled and sliced
salt and pepper to taste
2 eggs
1/2 cup shredded Cheddar cheese

Directions:

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.

Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.

Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper, cheese and bacon. Continue cooking until eggs are firm and cheese is melted.

Baked Tilapia Parmesan

Ingredients:

1/2 cup fresh grated parmesan cheese
3 tablespoons mayonnaise
1/4 teaspoon dried basil
1/8 teaspoon onion powder
2 lbs tilapia fillets
1/4 cup butter, softened
2 tablespoons fresh lemon juice
salt and pepper

Directions:

Preheat oven to 400 degrees F. Grease baking pan. In small bowl, mix together the cheese, butter, mayonnaise and lemon juice, basil, onion powder, salt and pepper.

Arrange fillets in a single layer in prepared pan. Bake for 20 – 30 minutes until done and flaky.

Remove fillets from oven and cover them with the cheese mixture on top side. Place under broiler for 2 minutes or until the topping is browned.

Be careful not to overcook the fish.

Makes 8 servings.

Parmesan Crusted Chicken

Ingredients:

4 boneless skinless chicken breasts
1/2 cup mayonnaise
1/4 cup parmesan cheese, grated
4 teaspoons Italian seasoned breadcrumbs

Directions:

Preheat oven to 425 degrees F. Mix mayo and cheese together. Dip chicken into mixture, sprinkle bread crumbs on top.

Bake for 20 minutes or until chicken is cooked through.

Makes 4 servings.

Creamy Au Gratin Potatoes

Prep/Cooking Time: Prep: 30 Minutes / Cooking: 1 Hour 30 Minutes

Ingredients:

4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups milk
1 1/2 cups shredded Cheddar cheese

Directions:

Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.

Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.

In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.

Bake 1 1/2 hours in the preheated oven.

Grilled Garlic Potatoes

Prep/Cooking Time: Prep Time: 15 Minutes / Cook Time: 25 Minutes

Ingredients:

6 medium baking potatoes, peeled and thinly sliced
1 large white onion, sliced
3 tablespoons butter, sliced
3 cloves garlic, minced
1 teaspoon chopped fresh parsley
salt and pepper to taste
1 cup shredded Cheddar cheese

Directions:

Preheat grill for high heat.

Arrange potato slices, separated by onion and butter slices, on a large piece of aluminum foil. Top with garlic, and season with parsley, salt, and pepper. Tightly seal potatoes in the foil.

Place on the preheated grill, and cook 20 minutes, turning once, or until potatoes are tender.

Sprinkle potatoes with Cheddar cheese, reseal foil packets, and continue cooking 5 minutes, until cheese is melted.

Three Cheese Baked Spaghetti

Ingredients:

6 ounces dry spaghetti pasta
3/4 cup ricotta cheese
1/2 cup (2 ounces) finely grated Romano cheese
2 cups (16 ounce jar) prepared spaghetti sauce
1 teaspoon dry basil
2 teaspoons dry oregano
1/4 teaspoon black pepper
4 ounce part-skim mozzarella cheese, shredded

Directions:

Cook pasta according to package directions. Drain completely. Preheat oven to 350 °F.

In a large bowl, combine ricotta and Romano cheeses, 1 cup spaghetti sauce, basil, oregano, and pepper. Set aside remaining 1 cup spaghetti sauce.

Mix cooked pasta with cheese mixture, stirring until pasta is distributed. Place in a casserole dish coated with vegetable oil cooking spray.

Top pasta and cheese mixture with shredded mozzarella cheese. Cover with lid or foil and bake 20 minutes. Remove cover; continue baking until cheese bubbles.

Remove from oven and let stand for three minutes.

Cut into four large or six smaller servings. Top each portion with remaining spaghetti sauce before serving.

Thimble’s Baked Spaghetti

Ingredients:

1 small onion, chopped
2 cloves garlic, pressed
1 small green pepper, diced
1 large can tomato sauce
1 tsp chili flakes
1 tsp basil
1 cup chopped olives
1 375g package whole wheat (or plain) spaghetti
1 cup chopped fresh spinach
1 cup cottage cheese
1/2 cup grated mozzarella
1/4 grated Parmesan

Directions:

Boil noodles according to package directions in a large pot.

To prepare tomato sauce (you may substitute your favorite tomato sauce recipe here):
Cook onion, chili flakes and garlic in a small amount of oil in a sauce pan. Add green pepper. Stir in tomato sauce, olives and basil. Let simmer on low for 10 minutes.

When noodles are done, drain and put back in the large pot. Pour tomato sauce over noodles and mix together. Add spinach and cottage cheese and stir until mixed in. Pour the whole mixture into a large casserole dish. Top with the mozerella and parmesean. Cook in a 350 degree oven for 20-25 minutes, or until cheese in melted and brown. Let stand for 5-10 minutes and serve.
